1) The pressure is just pushing to get out. And will go in all directions once it does. Similar to pollution:

2) The plants could get more water to the leaves, and would be stronger against high winds.

3) Depends on what the pollution is. Most things would make the water thicker and flow more slowly. Some things, like a gasoline spill, have properties which would reduce the viscosity.
